Prize Coffee Cake

From Betty Crocker New Picture Cook Book circa 1961

"With delightful changes for every occasion."

Ingredients:
3/4 c sugar
1/4 c soft shortening
1 egg
1/2 c milk
1 1/2 c flour
2 t baking powder
1/2 t salt

Directions:
Heat oven to 375F.  Crease and flour a square pan, 9x9".  Mix sugar, shortening and egg thoroughly.  Stir in milk.  Measure flour by dip-level-pour method or by sifting.  Blend dry ingredients; stir in.  Spread batter in pan.  Sprinkle with desired topping.  Bake 25 - 35 minutes or until toothpick stick in cetner comes out clean.  Serve warm.  Makes 9 3" squares.

Cinnamon Coffee Cake

Make Prize coffee cake above except sprinkle top with a mixture of 1/2 c brown surgar (packed) and 1 1/2 t cinnamon.

Streusel-filled Coffee Cake
"The rick cinnamony mixture both in the middle and on the top makes delightful eating."
Make Prize Coffee Cake above except spread only half the batter in pan.  Sprinkle with half the Streusel Mixture.  Add the remaining batter and sprinkle remaining Streusel over top.
Streusel Mixture
Mix 1/2 c brown sugar (packed), 2 T flour, 2 t cinnamon, 2 T butter, melted, and 1/2 c chopped nuts. 

Blueberry Buckle
"The best of old-time Blueberry Teacakes," says Mrs. Homer Dowdy of Flint, Michigan.
Make Prize coffee cake above except use 2 c flour and carefully blend in at the last 2 cups well drained blueberries.  Sprinkle top with mixture of 1/2 c sugar, 1/3 c flour, 1/2 t cinnamon and 1/4 c soft butter.  Bake 45-50 minutes.  Delicious as dessert when served warm with cream.
