Easy wheat bread from Jessica


I start this while my kids eat breakfast. Put 2 c. warm water (from the tap), 1 tsp yeast, and 1/3 c. honey in the bowl of your stand mixer. Then add 3-4 c. whole wheat flour and 1.5 tsp salt. Mix with the dough hook attachment until it is a sticky dough that pulls away a bit from the sides of the bowl. Add more flour if needed, 1/2 c at a time. (Lately I've been doing 3.5 c whole wheat with 1 c white flour). Knead it with the mixer on medium for 5 min. Cover and go about your day. I only use 1 tsp yeast so I can sort of forget about it until lunch time. When it has raised, punch it down and scrape into a greased loaf pan. Cover again and let raise for about an hour or so. Bake 350 for 40 min. Cool 10 min in the pan, then completely on a rack. It is both more delicious than normal bread and you will also find yourself using a lot less of it. My husband used to easily down 4 slices of toast at breakfast, now satisfied with one slice of this. Good luck!

Ingredients:
2 c        warm tap water

(I used 3 c whole wheat and 1.5 cup bread flour)

Directions:
1.  Combine warm water with yeast and honey in stand mixer bowl.  Let stand 5 minutes.
2.  Add flours and salt.  Mix with dough hook until it is sticky and pulls away from the sides of the bowl.  Add more flour if needed, 1/2 cup at a time.
3.  Knead it with mixer on medium for 5 minutes.
4.  Cover with towel and go about your day.  The 1 tsp yeast allows you to let this step go for a while.
5.  When it has raised, punch it down and scrape into a greased loaf pan.  Cover and let raise for 1 more hour.
6.  Bake at 350 for 40 minutes.  
7.  Cool 10 min in the pan then completely on a rack.
