Ingredients:
1 medium onion, finely chopped
2 garlic cloves, minced
1 T canola oil
2 (15 oz) cans black beans, drained and rinsed
1 (14.5 oz) can petite diced tomatoes
1 (4 oz) can chopped green chilis
1 T chili powder
1 t ground cumin
1 t dried oregano
1/4 t garlic powder
1/4 t pepper
salt to taste
flour tortillas
1/2 c shredded cheddar or mexican blend cheese
Directions:
1. Saute onion and garlic in oil until tender.
2. Stir in the beans, tomatoes, chilis and seasonings. Bring to a boil. Reduce heat, simmer uncovered for 3-5 minutes or until mixture begins to thicken.
3. Serve beans in tortillas with cheese.
Notes:
I left the salt out and used no salt tomatoes. It could have used a little salt after all.
